Over 4th of July weekend, we attended a BBQ at a friend’s house. My husband brought (his famous) mac and cheese, I brought lumpia (a Filipino egg-roll appetizer), and my daughter made corn muffins to decorate as Minions with her friends.

Part 1: Making the corn muffins

We chose to make corn muffins because they are yellow, like our favorite characters the Minions, from the new movie Despicable Me 3! Boxed Jiffy corn mix only requires two ingredients – egg and milk. We used half and half instead of milk because we had a lot of it in the fridge, and I figured it might make the cornbread stick together better. I made sure to use our new Bounty with Despicable Me 3 prints paper towels under our mixing area to keep the table clean and for inspiration!

My four-year-old daughter Aria has always been interested in cooking. At an early age, she stood by me and watched as I prepared our meals. Recently, I let her crack raw eggs. She did pretty good this time, and I only had to fish one piece of eggshell out of the bowl.

In just a few minutes, we had corn muffin batter and put them in muffin liners, ready for the oven!

Easy Clean-Up

Since we laid the paper towels out before we made the corn muffins, clean-up was quick and easy!

Part 2: Decorating

Our friends, Molly and Logan, love Minions too! Everyone was excited to decorate the corn muffins. I had a few decorating gels that our friend Melissa (who owns the bakery Essential Chocolate Desserts) gave us, and I threw some black icing dye in pre-made frosting Molly and Logan’s mom Rachelle had on hand. We set out the Bounty with Despicable Me 3 print paper towels to protect the tablecloth as our decorating area.

The kids had a lot of fun and were very proud of their creations. Seeing their joy makes me happier than the “goal” of “how it should look.”

Thank you, Bounty, for helping make clean-up quick and fun!
