Fitness Friday: Cooking with Cauliflower

During my Personal Fitness Challenge, I learned to appreciate a variety of vegetables I otherwise ignored. One of them is the cauliflower. I knew it had some nutritional value, but it wasn’t until I read more about it, did I wish I started to eat it sooner. My husband’s original mindset was only green vegetables are truly good for you. Boy was he surprised when I told him the following 8 health benefits of eating cauliflower from this article on Mercola.com:

Here are some of my favorite recipes using cauliflower:

Scalloped Notatoes by the Paleo Partridge (this recipe introduced me to another great vegetable, Celery Root, or celeriac)

Asian Cauliflower Fried “Rice” by Nom Nom Paleo (Elizabeth of Baby Boot Camp gave me a great tip, to use a hand grater instead of a chopper, to get more of a “chunky” consistency, which keeps better in the stir fry)

Garlic Cauliflower Mashed “Potatoes” by Nom Nom Paleo
