Here are the challenges from week eight of Baby Boot Camp’s MOLO Wellness Challenge, and how I fared:

Plan your meals for the week. Make sure to incorporate plenty of fresh fruits & vegetables.

I’m back to eating salads for lunch during the week. I went to Trader Joe’s today and bought my staples – spinach, avocado, cucumber, and tomato. My friend showed me an easy balsamic vinegar recipe which was balsamic vinegar, brown sugar, salt, pepper, and oil. So yummy!

Today was almost meatless, but my daughter didn’t finish her chicken nuggets (from Trader Joe’s), so I had to eat them. Also, I was being super lazy so I did not eat healthy. It was a Meatless Monday fail! Made up for it the following day. I ate a big salad for lunch with spinach, tomatoes, avocado, and cucumbers. I asked the members of the MOLO Facebook page what their favorite homemade dressing recipes are, and I got some great responses.

I love mixing olive oil, balsamic vinegar and about a tablespoon of maple syrup, salt and pepper to taste. Very easy and even the little one eats his salad with this dressing on (Helena)

Equal parts EVOO, red wine vinegar, balsamic vinegar and then sprinkles of paprika, basil, garlic and oregano (Kristine)

 

Evoo, lemon juice, cayenne, garlic powder, & salt (Mauree)

 

We have a really awesome olive oil company here in Albuquerque. They sell olive oil and balsamic vinegars. My fav mixture for a salad is the Persian lime olive oil with a Blackberry Ginger Balsamic. It’s amazing. (Danielle)

EVOO, salt, garlic powder, balsamic glaze, and nutritional yeast sprinkled on top (Katelyn)

 

Red wine vinegar, evoo, and celery bitters! Or lemon, evoo, garlic and salt (Dana)

 

Evoo, cilantro(tons),garlic,jalapeño, lime juice, salt and pepper. Blended in a food processor. (Meredith)

I never count the times I check Facebook, so I did 100 to cover it.

My friend made me a Grandma Maroni’s meatballs with veggie packed sauce, and we ate them tonight. The meatballs were soft and really good. My kid and my friend’s kid (who normally doesn’t like meatballs) ate their servings with no problem! Score.

I didn’t eat much cauliflower until I did the MOLO Challenge last year. It’s a pretty versatile vegetable, and not just the “white broccoli”. I like snacking cauliflower popcorn and roasted chickpeas.

Spend at least 3-5 minutes stretching today. Focus on deep breathing and a clear mind.

I like stretching, and forget to do it sometimes. I bought a foam roller which helps me a lot.

I’m inspired by the good deeds I read about from my fellow MOLO challenge members. Here are a few:

  • Make bagged lunches for homeless shelters
  • Paying for the coffee of the person behind you
  • A friendly note and flowers for kind neighbors
  • Taping dollars to vending machines
  • Taping coupons to grocery store items
  • Helping the elderly
