Ricotta Pancakes – good for breakfast and a great snack

My friend Amy did it again! Everytime I see her, she has delicious food on-hand to share. (See her previous recipe share here). This time, it was during a playdate at Santa Monica Airport observation deck. She made silver dollar sized ricotta pancakes. I offered a piece to my daughter, and she ate the whole pancake! Good thing I tried a piece before I gave it to her. Amy sent me the recipe, and I’m sharing it below. We brought some to our playdate with our friends Reese and Bethany (the mom). Reese is a very picky eater, but he sure liked the pancake! Another win for Amy! I forgot to add the vanilla and lemon in mine, but I did add chia seeds. Enjoy!

Ricotta Pancake recipe

Ricotta Pancakes
Ricotta Pancakes with chia seeds

Ingredients:

  • 6 eggs
  • 4 Tablespoons oil
  • 4 teaspoons sugar
  • 1/2 cup flour
  • 1/4 tsp salt
  • 16 oz ricotta
  • 1 tsp. vanilla (optional)
  • 1 tsp. lemon zest (optional)
  • chia seeds (optional)

Directions: Mix together in bowl with wire whisk and cook on low heat on buttered skillet
