This week’s meal plan

One thing I told myself I wanted to get better at is meal planning. When I was single and working, I ate out A LOT. It was the result of laziness, unpredictable work hours, and socializing. When I ate out, I didn’t always make the healthiest choices. Dining out also soaked up a lot of my paycheck.  Now that I’m a wife and a mom, I can no longer freely dine out. The challenge of home cooking (besides skill) is time and budget constraints. I never considered myself an excellent cook (how can I when I compare my cooking to professionally trained chefs?), but I’m learning (as with anything): you build skill and confidence with practice, preparation, and research; and every meal doesn’t have to be amazing.

Today, our Baby Boot Camp Los Angeles (Culver City and Marina Del Rey) MOLO challenge was to post a photo of what is in our refrigerator. Last month, when we had to do this, my fridge was sad an unplanned. Today, I’m happy to say I made a meal plan for the week (Saturdays are TBD), and here it is:

Sunday

Lunch: went to a friend’s birthday party
Dinner: Beef, Red Pepper, and Broccoli Stir fry with rice

Monday

Lunch: Edamame, radish, and avocado salad
Dinner: Lasagna

Tuesday

Lunch: Beet, arugula, goat cheese salad
Dinner: Happy St. Patrick’s Day! Corned Beef, potatoes, and cabbage

Wednesday

Lunch: Lunch date with a friend, place TBD
Dinner: Hamburgers

Thursday

Lunch: Leftover salad & Chicken noodle soup
Dinner: Leftover Corned Beef Sandwiches

Friday

Lunch: Fish Sandwich
Dinner: Wild Salmon and salad
