My friend Amy did it again! Everytime I see her, she has delicious food on-hand to share. (See her previous recipe share here<\/a>). This time, it was during a\u00a0playdate<\/a> at Santa Monica Airport <\/a>observation deck. She made silver dollar sized ricotta pancakes. I offered a piece to my daughter, and she ate the whole pancake! Good thing I tried a piece before I gave it to her. Amy sent me the recipe<\/strong>, and I’m sharing it below. We brought some to our playdate with our friends Reese and Bethany (the mom). Reese is a very picky eater, but he sure liked the pancake! Another win for Amy! I forgot to add the vanilla and lemon in mine, but I did add chia seeds. Enjoy!<\/p>\n

Ingredients:<\/p>\n

  • 6 eggs<\/li>\n
  • 4 Tablespoons oil<\/li>\n
  • 4 teaspoons sugar<\/li>\n
  • 1\/2 cup flour<\/li>\n
  • 1\/4 tsp salt<\/li>\n
  • 16 oz ricotta<\/li>\n
  • 1 tsp. vanilla (optional)<\/li>\n
  • 1 tsp. lemon zest (optional)<\/li>\n
  • chia seeds (optional)<\/li>\n<\/ul>\n

    Directions: Mix together in bowl with wire whisk and cook on low heat on buttered skillet<\/p>\n
